Turmeric Yellow Curry with Crushed Peanuts (Vegan)

Yellow Curry

Yellow curry is one of our three major curries of Thailand! It is mild in taste, but consists of many spices' taste like cumin, coriander, turmeric, fenugreek, garlic, salt, bay leaf, lemongrass, cayenne pepper, ginger, mace and cinnamon. I am excited to show you how we make our Thai Yellow Curry at home! Everyone can cook!

What you need:

1/2 can of Coconut milk (I like using Aroi-D coconut milk because there's a creamy part of top that I will mention later)

1 sachet of Thai Yellow Curry Paste (Thai Aree)

150 grams of Tofu (I use firm type)

120 grams of diced Potatoes 

100 grams of diced Carrots

100 grams of sliced Onions

100 grams of diced Tomatoes

30 grams of peanuts

1.5 cups of Water 

That's all for the ingredients.

4 Step-Cooking: only 10 minutes!

Turn on your stove at medium-high heat

1) Add coconut milk to a sauce pot and bring to boil. Stir at all time! 

2) Add Thai Yellow Curry Paste to the pot and mix well until boil. Keep stirring...you then will smell the yellow chilli paste and the creamy coconut milk goodness :D

3) Add tofu, potatoes, carrots, onions, tomatoes, peanuts and water to the pot and close the lid to avoid evaporates.

4) Boil with medium heat until cooked. Served with streamed rice or boiled pasta!
